Thinking of making these for a sweet treat with the optional add-ins of baking powder and vanilla extract.

According to my calculations, a single pancake (small, to be fair) would be around 31 calories:

– 1 large cavendish banana = 105 kcal
– 2 large eggs = 140 kcal
– 1/4 tsp vanilla extract = 3 kcal
– 1/8 tsp baking powder = 0 kcal

Total: 248 kcal. The recipe says it makes eight small pancakes, so 248/8=31. I made something like this years ago and they indeed turn out quite small, but it would just be for a little treat. It should be fine on a non-stick pan, but obviously butter is a nice (but calorically expensive) addition.

I would probably have two stacked and topped with some regular canned whipped cream; 15 g of canned whipped cream is about 40 kcal (can’t get the light stuff where I am).

So, two small banana pancakes and a bit of whipped cream = roughly 100 calories. Add a couple strawberries (8-12 kcal for two) and it would be great.

I’ll try it and let you know.

ETA: I always weigh my ingredients, but don’t have bananas at the moment (hence not having made it yet), so I’m basing the calories on Google AI estimates.
