
My current favorite lunch! I’m sure I’ll eat it everyday for the next month and then never eat it again for a few years, but definitely recommend.
Recipe: basmati rice, mixed super greens, bean salad (link to recipe below), TJ’s vegan tzatziki, pickled beets, radish, pickled onion, kalamata olives, hummus, harissa, and grape tomatoes!
