
Ingredients:
– 3 tbsp plant butter
– 3 tbsp all purpose flour
– 2 cups vegetable broth
– 1 cup plain unsweetened coconut yogurt
– 4 oz. can chopped green chilis
– 2tbsp nutritional yeast
– 2 16 oz. bags vegan chicken strips (I used Gardein)
– 16 small flour tortillas
– Seasonings of choice (I used cumin, garlic powder, onion powder, salt and pepper) measure with your heart
Instructions:
1. Melt butter over medium heat until bubbling
2. Add flour and stir together to make a roux
3. Add vegetable broth and nooch and whisk until incorporated. Let that cook until thick and bubbly
4. Take off heat and add in chopped green chilis and yogurt
5. Cook your chick’n how you like it with your seasonings
6. Fill tortillas with 2-3 pieces of chick’n and add to a greased 9×13 pan
7. Cover with sauce
8. Bake covered at 350 for 30 mins.
