I made some tofu shawarmas tonight for dinner, and I couldn’t even tell it wasn’t a chicken shawarma. They were so good! My family has been trying to go more plant based and has been having fun trying different food and textures.

Some of our favorites lately have been:

vegan pot pie (based loosely off of the Plant You version but used watered down cashew cream, swapped thyme and sage for TJs herbes de Provence that I ground in the mortar and pestle, and I used a lot of garlic.)

pizza beans w/italian sausage inspired tofu chunks & sourdough toast

orange tofu w/ fried rice

silken tofu chocolate mousse recipe

various bean brownies & blondies (favorite recipe so far but I use white beans because I can’t eat chickpeas and just make them into bars because I’m lazy🙃)

sweet potato skillet cookie recipe

What are some of your favorite things you’ve made/like to make since going vegan?

For the shawarmas, I did this seasoning that I’ve been doing for years:
2tsp each cumin, coriander, turmeric
1 tsp each garlic, allspice, paprika
3/4 tsp each black pepper, clove
1/2 tsp cardamom, cinnamon
I mixed that with cornstarch, Worcestershire, a little soy sauce avocado oil, and I think that was it? I coated the tofu and marinated it for a few hours then baked on a sheet pan with sliced onions and peppers. Then I assembled with TJs garlic spread and a pickle in the green onion pancakes from TJs.

For the orange tofu, I just mixed up a sauce with grated ginger, grated garlic, soy sauce, fresh orange juice, orange zest, and a tiny bit of cayenne, and then mixed in some cornstarch slurry when I liked the flavor. I did just a generic air fried tofu with cornstarch, garlic powder, onion powder, nutritional yeast, Worcestershire sauce, and a little water. Tossed in the sauce after it was air fried and served over TJs veggie fried rice (they changed the color of the bag!) and the Thai veggie gyozas!

    Oyster mushroom. Just cooked on its own on a skillet and finished with a little olive oil and thyme.

    Tofu scramble, hands down one of my favorite things to eat any time of day, not just for breakfast!

    Tofu salad (like egg salad, for sandwiches) Ive been using the same seasoning recipe for over 30 years and am happy to share it if anyone is interested.

    One go to for us is pasta (after we ride our bikes and we need a meal that comes together fast). I’ll sautee whatever veg we have, in oil, add all the aromatics and spices, then add a bit of marinara or tomato sauce along with cooked pasta. I like to add walnuts that have been finely chopped on top of all my pasta dishes for crunch and the health benefits.

    Plant you is awesome and her dump and bake recipes are great time savers. We REALLY loved the ramen one with gyoza on top.

  8. I love tofu skins (preferably fried soybean skins), woodear mushrooms and Shitakes in so many dishes, especially in Japchai Soup or low broth dishes. I use Glass Noodles, baby corn, bamboo shoots, zucchini or yellow squash, veggie broth (powdered, cubed or jarred bouillon) add spincah, bokchoy or cabbage to the end of the cooking. Seasonings are onion, garlic, Chinese 5 Spice, cumin, turmeric, parsley, sesame oil. I initially looked up mock duck on yt, which led me to my own recipe creation. There is an online shopping site that has free shipping if spend exceed a certain $ amount.     My absolute favorite is burrito bowl with fresh pico de gallo. Otherwise I’m all for loaded nachos, lasagna with tofu ricotta, stir frys, curry (both Thai & Indian), bibimbap, kimbap, Singapore noodles, Thai peanut noodles with tofu, marry me butter beans. For fun I recently made ratatouille.
