I plan on attempting to make Choux Au Craquelin (Cream Puffs) tonight for a get together. I was hoping someone would be able to help me figure out how to replace the eggs in the recipe. I have JUSTegg and ground flax that I figured might could work. I’ve attached the recipe I wanted to follow. I already plan to switch everything else to vegan by using vegan alternative for the butter and dairy items. I’ve just recently started switching to a vegan diet after being vegetarian for 13 years so not familiar with egg replacements in recipes too much.

Vanilla Bean Diplomat Cream – 3 Egg Yolk
Choux Pastry – 100-120g eggs

  1. Just will probably work for the pastry.

    For the cream, I would use some mix of oil and nutritional yeast.

    I would put the chance of success on your first attempt very low.. This sort of thing is difficult even if you can follow the recipe exactly. Making a lot of subs to a complicated pastry recipe and expecting everything to just work is… overly hopeful 🙂
