

I hope this is okay. I am not a recipe developer. I make a large pot of soup most weeks. This was made today. And it is good! I am inspired by posts here all the time and wanted to "pay back" in a way.
The soups always start the same but with different main ingredients.
Start with onion, celery, and carrot diced, cooked in some olive oil. Once 'soft' I add garlic and ginger and cook another 5-8 minutes.
Today I added one cauliflower chopped. Had a couple of potatoes getting old so peeled and chopped and added those. Salt & ground pepper. Once it comes to a boil, lower to a simmer. I cooked it on low heat for about an hour.
Then used an immersion blender to end up with a smooth thick soup. Then added a can of chickpeas, a can of coconut milk, sliced mushrooms. Added handful of spinach at the very end.
Voila!
