Grabbed a few bags of dried wheat gluten to experiment with, but I'm having hard time learning to cook with it. We made hong shao kao fu, but the internet isn't giving me many other ideas.

We've tried pan frying it (after rehydrating/draining) to add to a stir fry but it takes SO much oil and never really crisps, it just falls apart. Spouse wants to try it in the air fryer next time but I worry it'll be hard as a rock. Any recommendations?
