
This is one of my favorite salads, bún 😍
It has vermicelli noodles as the base, a cucumber salad at the side (tossed in furikake, msg, salt, and chili crisp), fresh lettuce, mint and cilantro, homemade dõ chua (pickled daikon radish), and then I fried up vegan chicken (Green Mountain plant based wings) in a ginger garlic sauce. I topped it with some sesame seeds for color.
Then I did a homemade peanut dressing over everything, then a sprinkle of crushed salted peanuts and chili flakes.
I love this salad so much! I had it for the first time at a Vietnamese restaurant and now I’m obsessed with making it at home.
If you prep the dõ chua and pb dressing in advance it’s quick to make. And then you have leftover dõ chau to make bahn mi! And the pb dressing can also be used as a great dip
