Ingredients
1 pack (4 links) Gardein Ultimate Plant-Based Bratwurst
4 Vegan Pretzel Buns (I used Pretzilla)
1 large yellow onion (thinly sliced) + 1/2 cup of a vegan-friendly Lager or Pilsner – I used paulaner munchen lager
1 cup sauerkraut (drained)
Vegan sour cream (Kite Hill) and a spicy brown mustard
Fresh dill (chopped)
2 tbsp vegan butter
Instructions
Beer-Braised Onions

Heat 1 tbsp of oil/butter in a skillet over medium heat.

Add the sliced onions and a pinch of salt. Sauté for about 8–10 minutes until they are soft and starting to turn golden brown.

Pour in the 1/2 cup of beer. Turn the heat up slightly and let it simmer until the liquid has evaporated and the onions are coated in a thick, savory "glaze." Set aside.

In the same skillet (no need to wash it; the onion/beer residue is great flavor), add another touch of oil.

Cook the Gardein links over medium-high heat. Rotate them frequently for 8–10 minutes

Slice your pretzel buns and lightly toast them.
- Build the dog in this specific order to keep the bun from getting soggy:
Spread the spicy brown mustard on the bottom bun. Then add the links and top with the beer caramelized onion. Add sauerkraut on top, sour cream, and finally dill. Enjoy!
