In pan make a portion of udon noodles.

Rehydrate tvp mince and squeeze the liquid out. Then season with sesame oil and dark soy sauce.

Air fry for 10 mins at 150c.

Fry half an onion with a handful of sliced mushrooms and small florets of brocoli.

Mix the sauce:

2 tbsp tahini

1.5 tbsp light soy sauce

1 tsp dark soy sauce

1 tbsp brown sugar

1 tbsp of chilli crisp or hotsauce of choice

1 tbsp rice wine vinegar.

1 tsp garlic powder

1 tsp onion powder.

Combine sauce, noodles and fried veggies then top with crispy mince, sliced chili and spring onion.

Smash into face.
