I'm doing a Santa Maria style BBQ for our crew as part of an appreciation event. One of our crew members is vegan, and another is vegetarian. Obviously I need to sub the ham, bacon, and worcestershire. Do you have recommendations to add the umami and smoky flavors that these ingredients would bring? I was thinking that maybe dried porchini mushrooms would be an option, but I bet you have better suggestions.
Also, I know dark brown sugar isn't always vegan. Is there anythin else in the recipe that I need to be careful when buying?
