I've got a chronic illness so sometimes I rely on low effort (and admittedly that also means not the best nutrition quality, but could be worse) meals when I'm super low on energy. This is one of my go-to recipes. Heads up for high sodium content. I don't have to worry about salt as much because my condition actually benefits from a little extra sodium. If you want to cut back on the salt content a bit, you can probably replace half the can of beef consommé with a low sodium beef broth, but it will make it a bit less rich, and the richness is what makes this some really satisfying comfort food!

1 14oz package smoked sausage

1 can beef consommé

1/2 cup pre-sliced baby bella mushrooms

1 cup frozen chopped bell peppers and onion mix

1 cup long grain white rice

1 tsp Montreal steak seasoning mix

Chop up the smoked sausage. Set the instant pot on sauté on high, sauté the smoked sausage and mushrooms until a little cooked around the edges, deglaze the bottom of the pan using the beef consommé (The sauté and deglazing steps can be skipped to save a little more energy, but it's worth it for the extra depth of flavor). Add in all the other ingredients, stir, and set to pressure cook on high for 5 minutes. After that, let it slow release for 10 minutes, then release the pressure the rest of the way.

This recipe yields 4 servings of around 1.5 cups. The serving size pictured is 1 of 4 servings logged in the LoseIt app.
