I’m obsessed with the NYT cooking app and often am able to mod recipes to get them <500kcal per serving since I love to cook. Just made this recipe for the first time tonight, and ya’ll, I ran here.

I love this because it’s a super easy, one skillet meal. One of the great things I’ve learned from the NYT cooking chefs is that you can toss shelf stable gnocchi right into a pan and fry them up to make them perfectly crispy on the outside and fluffy on the inside. This recipe uses that technique and adds fresh asparagus (tis the season!), miso, butter, baby arugula, a splash of sherry vinegar, and all the fresh black pepper your heart desires. It is truly out of this world for a sub 350kcal meal. You could easily mod reduce the fat by cutting the butter in half, up the volume with additional greens, or up the protein by serving this as a side dish. Cannot recommend enough!
