
Probably not the best picture as I’m pretty blind, but this was delicious!
I lined an old meal kit tray with parchment paper, and covered the bottom and sides with sliced up half pita (80 calories, 3 G protein), handful of spinach (10. Calories, 1 G protein), r tbsp low fat cottage cheese mixed with half tablespoon nutritional yeast, everything seasoning, and red pepper (50 calories 7 G protein) , topped with two eggs (150 calories, 12 G protein), shredded deli turkey slice (30 calories, 5 grams protein), 6 slices hormel turkey pepperoni, halved (30 calories, 3 G protein), plus paprika, black pepper, and more red pepper (I like it spicy), and even a half tsp maple drizzle as a treat (10 calories).
I baked this all in my convection toaster oven for 20 minutes. I love how the spinach uncovered at the sides got all crispy!
Total of 360 calories and 32 g of protein!
Disclaimer- I don’t skip to 1200, I usually eat a few of these small meals a day. I just like the recipes on this sub. I’m sure you could lighten it up further with a lower calorie pita or maybe a tortilla. Not sure how no fat cottage cheese would work without the creaminess from the fat.
