I've been super consistent lately but dreading my usual meals. Made gimbap instead! Brown rice and canned tuna helped me keep the calories to 290-330 calories per roll. This made 5 rolls.

2 cans tuna, toasted on low heat until drier

4 cups cooked medium brown rice

3 eggs, cooked like thin omelet, cut into strips

2 medium carrots chopped matchstick style, sauted

Half pickeled daikon radish cut into long strips

Cucumber, cut into long strips

Season cooked rice with 1tsp sesame oil, 3 tsp sesame seeds, half teaspoon salt. Set aside to cool while you prep everything else.

Roll, together, brush with sesame oil before cutting.

I weighed about 35-45g tuna per roll, 40-70 calories

120-130g brown rice per roll, 140-170 calories

Eggs came out to about 70 calories per roll.

Veggies, sesame oil, seaweed was close to 40 calories

I had kimche on the side. My kids like these so it's nice to share with them. They like to dip in different sauces.
