The wine pairings were excellent and easily one of the highlights. It’s a very intimate experience, with only a handful of chairs and a clear view into the kitchen, so you feel immediately connected to the chefs. They prepare and introduce each dish as it arrives, which gives the meal an omakase-like feel.
The influences are wide-ranging, with touches from Southeast Asia, like a langoustine broth with Thai spices, alongside Asian and a bit basque inspired fish preparations.
The chicken and lamb were the standouts for me. Both were cooked and seasoned exceptionally well, slow-cooked and then finished over the fire, which gave them a deep, earthy flavor.
