Tofu Tacos (Makes ~16 mini/street tacos) –

Ingredients:

For the tofu –

450g Block Firm Tofu,

1 tsp Salt,

1 tsp Pepper,

1 tsp Chilli Powder,

1 tsp Paprika,

1 tsp Cumin,

1 tsp Coriander

Oil Spray (optional),

1 Green Capsicum,

1 Red Capsicum,

For the tomato salsa –

1 tbsp (20ml) Oil,

1/2 Onion (diced),

1 tsp Garlic (minced),

1 tbsp White Sugar,

1 tbsp White Vinegar,

1 tbsp Tomato Paste,

400g Diced Tomatoes (canned or fresh),

For the tacos –

16 Mini/Street Tortillas,

Handful of Fresh Coriander or Parsley,

2 Limes,

Method:

  1. Grate tofu use the largest holes of a grater, add into a bowl,

  2. Add all the seasonings to the tofu, mix throughly.

  3. Air-fry or oven bake for 30 mins at 200C/390F. *Optionally spray with oil to make the tofu more crispy.

  4. After 15 minutes, cut capsicums into strips, mix them through the tofu. Return mixture to the airfryer/oven for the last 15 mins.

  5. To make the salsa, heat oil in a pan over medium heat, fry the onions for 2 minutes or until softened.

  6. Then add the minced garlic, sugar, vinegar and tomato paste. Stir and cook for 1 minute.

  7. Add the diced tomatoes, stir, simmer for 5 minutes and then turn the heat off.

  8. Add the tofu and capsicum mixture to a large clean bowl. Pour oven the salsa and mix everything together.

  9. Heat the tortillas in a pan or microwave.

  10. Add the tofu mix to the tortillas, garnish with coriander/parsley and squeeze over fresh lime juice, enjoy.
