Been looking forward to making something extra for my birthday. Strawberries are in season, I love cream cheese frosting, I no longer drink so I just use alcohol in my cooking – Irish whiskey in the strawberry gel. The cake recipe is from banana diaries (raspberry almond cake) and the only thing I changed was I toasted the ground almonds prior to using as a dry ingredient and I added the zest of two lemons. Best dough I’ve ever tasted. I made mini donuts which I piped with crĆØme patisserie and covered with pink chocolate. All ingredients are from a discount supermarket. I would rate the difficulty at 2/5 super easy cake.

Cheese frosting is agar, vegan cream cheese, coconut cream, cooking juice from the strawberries, set then blitz and it’s smooth. I made it the night before I genuinely couldn’t wait to wake up and try it… I am 39 years old today šŸ˜….
