Lunch and dinner yesterday was a salad day!

During the week I usually prepare chicken meatballs and cook a whole chicken to have shredded chicken for meals throughout the week. I’m just one person in my household, so it’s an easy (and inexpensive) way of making sure I have good meals during a busy work week and don’t fall into the bought lunch hole, I so often used to back in the day.

Lunch: spinach, lettuce, tomato, mango, strawberries, avocado, chicken meatballs and an olive oil italian seasoning dressing.

Dinner: red cabbage, raw broccoli, cucumber, edamame, red bellpepper, red onion, feta, shredded chicken and dressing with olivenoil, parsley, lemon, salt, peoper and garlic powder.

  1. Looks amazing. I don’t eat meat so in my head I’m replacing the chicken with an alternative, but both dishes look delicious.

  2. That looks really balanced and healthy, I love to make these kind of meals, but my discipline to ..and buy all the ingredients…and prepare them all… isnt always there, even though its really simple. So well done and hurray for the effort and presentation!
