Recipe:
9 eggs
1/4 cup cream
300 g Cremini mushrooms sliced
Two bunches/big handfuls of fresh baby spinach
Salt to taste
Black pepper
1/4 tsp fresh nutmeg
1/2 fresh grated Romano cheese
4 tbs olive oil
1 shallot minced
4 cloves garlic minced
In oven-safe skillet: Cook the shallot in the oil until it’s sweated for a few minutes, add the garlic. Add the mushrooms and cook on low heat until the water is cooked out of them and steamed off. Add spinach, salt, pepper, nutmeg, toss and cover and wilt until spinach is wilted. Let steam off on medium heat another few minutes. Whisk eggs with cream and cheese. Pour in pan. Cook on low heat until the bottom of the egg is set. Transfer to oven and cook until just golden on top, about 10 minutes at 400F.
