Hi gang!

I’ve been wanting to make a gyro for myself and my kids, but I didn’t want to feed the neighborhood doing the spit with however many pounds of meat. I came across a recipe online and voilà! It was my first time using transglutaminase and it was neat cutting the ground beef and lamb as if it were one homogeneous piece of meat. I was afraid that the pieces I cut them into were going to crumble on the griddle. Nope! It honestly had the texture of the meat I get in gyros at the Greek joint my late wife and I went to. I made my own tzatziki sauce as well. I’ll include a link in the comments. It has recipes for the meat, tzatziki, and pitas. I thought about making my own, then I got lazy. Lidl actually has pretty good pitas!

Make it a great one!
