  1. I had some leftover stuff from making enchiladas so made it into a little bake. Layered the enchilada sauce, tortilla, filling, tortilla, tiny bit of filling, sauce and cheese. Froze it and baked from frozen.

    The filling is about 3 cups of southwest spiced chicken chopped up, a swirl of salsa verde, handful of cheese, 1/2 cup sour cream, a blob of cream cheese, and some cooked green peppers and onions. I dont think the specific amounts matter, do it to taste.

    Was delicious and easy!
