If it doesn’t have that crust it doesn’t taste as good. Also if you’ve never tired it, marinate the chicken with pickle juice for a while before you cook and it’ll taste even more divine.

Carbonized meat produces PAH’s and Heterocyclic amines.. probably not super harmful in small quantities, but you definitely don’t want to eat charred meat regularly.

Everyone in the comments saying it’s bitter as if they know what the charred bits are made of… it looks like there are some heavy seasonings that are charring, not the actual chicken. Some seasonings do not take well to this much charring… while other seasonings taste even better like this
