
Made this the other day I can't get enough of it! I used chickpea pasta for extra protein and cremini mushrooms but any mushrooms would probably work fine. Followed the instructions exactly and used damp paper towel to get rid of dirt on mushrooms. Also made sure to use coconut cream too and not coconut milk. I added some air fried breaded vegan chicken to top it for some crunch but you could do tofu or whatever. It turned out looking just like the picture. Super simple so highly recommend.
