Theres this Spanish/Catalan sweet called Conde. It’s a kind of big, soft cookie sandwich with jam or chocolate spread in between and half bathed in dark chocolate. I tried using a vegan butter cookie recipe but it makes crumbly cookies and that’s not it.
I can’t figure out the type of cookie it is and the non vegan recipes are also kinda scarce. I’ve only found one single video that makes the condes right, but it obvi won’t work cause it has eggs in it. Anyone with better baking experience that would be able to help me?
