Sunrise Swirl Orange Rolls [homemade]

  1. Sunrise Swirl Orange Rolls (makes 8 large rolls)

    Dough

    3/4 cup whole milk, warm (100–110°F)

    1/4 cup heavy cream, warm

    2 1/4 tsp instant yeast

    1/3 cup granulated sugar

    2 large eggs

    1 egg yolk

    6 TB butter, very soft

    1 tsp fine salt

    4 1/4 cups all purpose flour (possibly a few extra TB)

    Orange Filling

    8 TB butter, very soft

    1 cup granulated sugar

    1/4 cup orange juice

    1 TB vanilla extract

    At least 2 TB orange zest (from about 2 oranges or similar citrus like tangelos)

    1 TB all purpose flour

    Orange Glaze

    2 cups powdered sugar

    2 to 3 TB fresh orange juice

    1 TB heavy cream

    1 tsp vanilla extract

    Method

    Combine warm milk, cream, yeast, and all of the sugar. Let sit 5 minutes.

    Add eggs, egg yolk, butter, salt, and 4 1/4 cups flour and knead about 6 minutes until smooth and slightly tacky. Add a few extra TB only if needed.

    Cover and let rise until doubled, about 60–90 minutes.

    Mix filling ingredients together.

    Roll dough into a 16×16 square.

    When preparing filling, infuse the zest into the sugar first by rubbing them together with your hands.

    Spread filling evenly over the dough.

    Roll up into a log and cut into 8 large rolls.

    Place in a greased pan.

    Cover and let rise until puffy and touching, about 45–60 minutes.

    Lightly brush tops with melted butter.

    Bake at 350°F for 18–24 minutes until lightly golden and soft.

    Let cool 10 minutes.

    Mix glaze until thick and smooth.

    Glaze while warm
