
Recipe from: "Honey" Garlic Roasted Chickpea Wraps | Food Faith Fitness
Not real honey btw, it’s made with agave so it’s fully vegan! Crispy, sweet, garlicky and super filling 🙂
Ingredients (for 2 wraps):
Chickpeas
- 3/4 cup canned chickpeas, drained and rinsed
- 1/2 tbsp olive oil
- 1 tsp garlic powder
- salt and pepper
Sauce
- 2 tbsp agave
- 1 1/2 tbsp low-sodium vegetable broth
- 1/2 tbsp low-sodium soy sauce (or tamari for GF)
- 1/2 tsp white vinegar
- 1/2 tsp fresh minced ginger
- 1/8 tsp sesame oil
Cauliflower rice
- 2 cups cauliflower
- 1/2 tsp olive oil
- 1/2 tsp fresh minced garlic
Wraps
- 1 cup coleslaw mix
- 2 tbsp diced water chestnuts
- 2 tbsp chopped cilantro
- 1 tbsp sliced green onion
- 1 cup spinach
- 2 flatbread wraps (use GF wraps if needed)
Instructions:
- Preheat oven to 400°F. Pat the chickpeas dry, toss with olive oil, garlic powder, salt, and pepper, then bake for 30–35 mins, stirring once, until crispy.
- While they bake, simmer the sauce ingredients for about 2 mins until slightly thickened, then let it cool.
- Pulse the cauliflower in a food processor until rice-like. Sauté the garlic in a little oil for about 1 min, add the cauliflower rice, and cook 5–7 mins until lightly golden.
- Mix the coleslaw, water chestnuts, cilantro, and green onion, then toss with the sauce.
- Assemble the wraps with spinach, cauliflower rice, slaw mixture, and roasted chickpeas. Roll up and serve.
