Had the most amazing meal I’ve had in a long while at Vaisseau by Adrien Cachot.

My wife and I were fan of the chef when he was participating Top Chef France a few years ago (which I basically highly recommend for everyone in this sub to watch although it needs a VPN, it is quite a nice show).

Reservation made 2 month ahead.

We went for lunch and the “N’importe quoi” menu. 120eur + drink pairing for 80eur.

Course is blind. Dishes come first with no explanation until plates are taken away, which provokes a discussion between patrons. Don’t go for business meal, this is really for food geeks.

Food was excellent.

Started with a quail egg bouillon, followed by a dozen amuse bouche served all at once. Then 4 dishes, cheese and the signature desert. Mignardises came with the coffee/digestif.

Food was excellent, many curve balls but not gimmicky.

Personal highlights were the cervelle karaage, the meringue poivre penja (white pepper small meringue that desintegrates in your mouth, in point for a UFO themed restaurant). The XO sauce homemade for the scallop was to die for. Beef heart that felt like a beef tongue. The signature desert etc etc trying to not share too much much details to not spoil the experience.

Drinks were awesome, great pairing and the comically large bottles most came from made it a memorable meal.

Certainly didn’t disappoint. Will definitely go again for the “grand n’importe quoi course”
