Eggplant prep:
– dice eggplant with skin, toss with oil, chilli flakes, sea salt
– spread and bake at 200C for 20-30 min, tossing once or twice
– leave aside
Pasta and sauce:
– add chopped tomatoes to heated EVO on pan
– add some tomato concentrate (Mutti ⭐)
– add salt, chilli flakes, optionally dried oregano
– add pasta water to achieve ideal volume and thickness
– cook for 30 min to allow great consistency and flavor
Putting it together:
– add cooked pasta to pan with sauce
– add eggplant last minute only for mixing, otherwise flavor will be dumbed down by tomatos
– serve with buratta cheese (not typical, I love it)
– and obviously basil, but I had none!
Optional agretti side (random, we just had it instead of salad. It’s known almost only in the mediterranean countries, but it ruleesssss):
– steam agretti for 10-15min
– add lemon juice, EVO, salt, enjoy!
