texture: tender and feels like actually really realistic due to the fibers. it that throws you off I dont recommend this recipe for you.

taste: mainly taste like the marinade and glaze you use.

recipe for 6-8 Vegan rib fingers

ingredients:

* 300g of marinaded vegan pulled pork (preffered anything like soy curls or soy-seitan blend, but anything with fiberious texture and can handle some moisture without turning mushy will do)

slurry to bind everything:

dries

* 10g vital wheat gluten

* 10g pea protein

* 10g tapioca starch

* 15g corn starch

* 3g or to liking veggie stock cube

wets

* 10g Nutritional yeast

* 15g of your marinade of choise.

* 100 ml water (or slightly more)

to finish:

* oil spray or oil and brush

* glaze (I personally just used sweet soy sauce as glaze about 20g-30g)

equipment:

* microwave safe container/baking tray ( mine was 13 cm × 18 cm × 4 cm)

* a bowl

* microwave

* fork

*brush

* airfryer, oven or stove with pan.

steps:

  1. for the sluryy mix first the dries then add the wets with the fork. the consitency should be slightly thinner than pancake batter. if it is too thick add more water to it bit by bit.

  2. make sure the the vegan pulled pork is shredded well. then start putting the fibers into the baking tray parallell to how the bones usually would lay. after 1 layer stop.

  3. pour a bit of the slurry over the fibers. then continue building with the fibers.

  4. keep this up until you run out of the vegan pulled pork. it should look like there is too little slurry but there is not. use the same fork from step 1 to push the fibers into the slurry. until it is all nice and compact.

  5. microwave about 3 minutes on the highest setting. and then after that microwave a minute at the time. when it is completely dry but still bit soft and sticky let it cool for about 10-15 minutes.

  6. after that you can sear it in the pan with oil or put it in the oven/airfryer with some oil. after you have done each side. you can put the glaze in the pan or brush the glaze on the ribfingers if using airfryer or oven. make sure all sides are coated and then you should be done.
