Had a rough day today, all I wanted to do was scarf down some ice cream, but l only had 150 calories left for the day…
So I decided to try and make do with what I had. And it turned out great! It's very simple but I thought I'd share with you guys
I don't have any fancy blender or food processor, but an old model nutribullet that starts to smell when I make this but hey it works lol! Was working some big ass berries and ice cubes too
Recipe I did:
– 150g frozen strawberries
– ~150g ice
– ~150ml almond milk
– couple artificial sweetener flavor drops, cinnamon & salt
– 17g soy protein (salted caramel)
– tsp xanthan gum (added at the end)
So I started out by blending the berries, ice and milk. Basically the blender struggles a lot but What I do is: be patient lol. I just turn it on, let it blend for a couple seconds as much as it can (even if it's not turning it all), turn it off, shake it up, and repeat as often as I have to… I added a bit of water in the process, but it was only about ~40ml total I'd say. Now the thing even if it looks like it's not doing anything it actually is. By the end, as you can see, my nice cream was totally smooth, but when I looked at the blender it wasn't turning at all. I added the soy protein somewhere in the middle of the process and the xanthan gum near the end. Warning it absolutely takes a while haha but it's worth it imo!
