

My wife wanted Beef Wellington and it isn’t exactly a meal for two, so I tried something different. Dijon duxelles tart, filet on top, red wine demi-glace on the side. Fondant potatoes set in a parsnip spinach Parmesan purée with crispy pancetta. Roasted broccolini and radishes. Overcooked lobster tail.
I skipped adding prosciutto to the tart, on account of the pancetta inclusion with the potatoes.
Not bad for a weeknight dinner.
