Earth Day Sugar Cookies [homemade]

    Earth Day Sugar Cookies

    Makes about 20 cookies

    Bake at 350°F

    Ingredients

    2 1/2 cups all-purpose flour

    3/4 tsp baking soda

    3/4 tsp fine salt

    1/4 tsp cream of tartar

    2 sticks butter, room temperature

    1 3/4 cups granulated sugar

    1 large egg

    1 large egg yolk

    1 TB vanilla extract

    Chefmaster gel food coloring:

    Royal blue + sky blue

    Leaf green + forest green

    Instructions

    Preheat oven to 350°F. Line trays with parchment.
    Whisk together flour, baking soda, salt, and cream of tartar.

    Beat butter until smooth. Add sugar and cream 2–3 minutes until light and fluffy. Add egg and egg yolk, mix until combined, then mix in vanilla.

    Add dry ingredients and mix just until a dough forms.

    Divide the dough about 70/30. Color the larger portion blue using royal blue and sky blue. Color the smaller portion green using leaf green and forest green. Mix by hand with gloves until evenly colored.

    Scoop the blue dough with a 0.75 oz scoop and the green with a 0.38 oz scoop. Roll the blue into a ball.

    Break the green into small pieces and press them around the blue dough, then roll lightly to create that “earth” look. Gently flatten into a thick puck.

    Freeze until solid, then transfer to a bag.

    Bake straight from frozen at 350°F for about 12 minutes, until edges are set and centers are still soft.

    Let cool on the tray so they finish setting.
