


I guess I hadn't realized how healthy and minimally processed soy curls are. This stew has no added oil. To get the right flavor and texture I soaked the in Not-Chick'N broth with some coconut aminos in them and roasted them in the oven before adding them to the stew. I used fresh tarragon because it goes so well with asparagus and it's in season right now, but other herbs would work too.
