    It’s missing ***douchi*** (fermented salted black beans) which is among the most integral ingredients of the Lao Gan Ma chili oils alongside the chili peppers and the Sichuan peppercorns itself. It is what provides much of the necessary saltiness + umami of chili crisp.

  2. Forgive me if I am misinformed, but I heard safe chili crisp is only supposed to include fully dry ingredients? How do you avoid botulism when using fresh ingredients?
