Pizza Dough:
* 540g bread flour
* 1 Tbsp sugar
* 2 tsp active dry yeast
* 2 tsp salt
* 1 3/4 cups warm water
* Olive oil
Pour most but not all of the warm water over the yeast and sugar in a large bowl and allow the yeast to bloom for 10 mins. In another bowl whisk the flour and salt. Once the yeast has bloomed, pour in the flour salt mixture and mix with a wooden spoon. If the mixture looks dry, add a little more water until fully hydrated. Dump the dough onto a lightly floured surface and knead until smooth and soft, about 5 mins. Oil a large bowl and making sure the dough is coated before covering with a damp kitchen towel and allowing it to rest for 1 hour. Lightly oil a half sheet pan and stretch the dough out. It will begin to shrink back from the edges. Allow to rest 10-15 mins before stretching to the corners. Cover again with the damp towel and allow to rise 1-2 hours. Preheat oven to 450°F. Bake the dough until just barely golden, 10-12 mins. Remove from the oven and add your toppings. Allow to bake another 15-20 mins. Remove from the oven, allow to rest 2-3 mins, slice and enjoy.
Sicilian Style Pizza Sauce:
* 1 yellow onion, thinly sliced
* 2 garlic cloves, grated
* 6 anchovy fillets, minced
* 1 large can crushed tomatoes
* 1 Tbsp olive oil
* 1 Tbsp oregano or Italian seasoning
* Salt and pepper to taste
In a pot on medium heat fry the anchovies and garlic until fragrant. Add the onions and allow to sweat until soft and slightly Caramelized, about 20-30 mins, stirring often. Add in the crushed tomatoes and oregano and stir. Bring to a boil and reduce heat to low. Cover with a lid and allow to cook for a couple hours. Season with salt and pepper as needed. Cool to room temp before using.
