
Baid tumat are a style of scrambled eggs with tomato and spices made in the Gulf. Think shakshuka but with scrambled eggs.
I made mine with a bit of minced onion sauteed with chopped fresh tomato cooked down into a jammy sauce. I added a pinch of bzar (local spice mix, but you could use any masala or 7 spice for a more Lebanese flavor) and added a container of broken up silken tofu. I added a pinch of powdered black lime for acidity and grind of black salt for the sulfury taste. Heated it through until the liquid was right. Pictured served with some whole wheat Arabic bread, veggie sausage and some local pickle.
