  1. Chicken cutlets, bacon, romaine, homemade Caesar dressing, parmesan. Split the focaccia in half and placed a slice of provolone to let the heat from the bread melt the cheese slightly. – No, you’re not supposed to cut into hot bread. But don’t careeee. Leftover focaccia is being turned into croutons.

    Focaccia recipe I use is by Emma Fontanella “Big Bubble No-Knead Focaccia Bread Recipe”

    Caesar dressing is egg yolk, juice from a lemon, 4-6 anchovies, couple splashes of Worcestershire, spoonful of dijon, 1 super large garlic clove, fistful of grated parmesan. Blend everything in an immersion blender. While it’s running, slowly add in a heaping 1/4 cup of avocado oil. Whisk in little under 1/2 cup of olive oil to finish. Add fat pinch of salt and freshly cracked black pepper.

    You can go to Serious Eats for the exact measurements. I know the recipe by heart because I damn near make it on a weekly basis.
