Bed of baby spinach, quinoa, tzatziki sauce, tomatoes, cucumbers, smoked salmon marinated for 15 minutes in lemon, olive oil and garlic salt. Cook salmon on medium high without the skin to get crispy.

    This looks like the kind of meal that makes you feel like you have your life together for at least 20 minutes. Crisp salmon, fluffy quinoa, tzatziki… ridiculously solid combo.

  2. This is almost a dish I make in the summertime– grilled salmon on a bed of quinoa tabbouleh with dill/lemon labneh.
