I think this was the best steak I’ve cooked yet. I tend to overcook things because I try to juggle too many at once. Tonight I wrote out the entire plan and what timers to set in what order.
The steak was so good that I learned I like steak a lot more than I thought I did. I dry-brined about an hour with somewhere around 2-3 grams of salt for a 250 gram steak. Pan-seared roughly 3 minutes per side, basted with a tbsp of butter, a little rosemary, and a ton of garlic for the last minute or so.
I usually go for well-done but my girlfriend likes it rare or medium. We were splitting the same steak tonight so it was redder than I would go for. I keep overcooking her steaks and still did tonight, but I think I’ll get it next time and aim for more like 2 minutes a side. But anyway, we both thought it was delicious.
I think my cheap nonstick pan doesn’t get hot enough or hold heat well enough to properly cook a steak. I need a better pan. But I’m getting better with every attempt.
We got the steak and fish both on markdown, as well as a big chuck steak I’m gonna cook later this week. Gonna be so good!
