At my restaurant we change the menu every 10 weeks. We have had menu themes like Harvest, Celebration, Asian Pacific, Southern and Northern Italy(seprate menus respectively).

Each menu has 5 appetizers, 8-10 entrees, and 3 desserts that encompass the spirit, and flavors of the theme.

This menu, which started this past Thursday, we are focusing on Spain.

These are Oxtail Croquets with Cilantro pesto.

These are absolutely delicious. Ithe flavors are super impactful, with an amazing crunch to the breading, followed by a nice fluffy, blend of braised Oxtail, roasted red peppers, potato and our blend of seasonings.

Paired with a Cilantro lemon pesto, it acquires a mouth watering citrus blend to cut through, and brighten the dish.

I will post more pictures from the food of this menu, but I thought this was a good item to start with.
