  1. Carrot Cake Cookies with Cream Cheese Frosting

    Ingredients

    2¾ cups all-purpose flour

    1 tsp baking soda

    ¾ tsp fine salt

    2 tsp cinnamon

    ¼ tsp nutmeg

    ¼ tsp ginger

    ⅛ tsp cloves

    1 cup butter, softened

    ½ cup granulated sugar

    1 cup brown sugar

    2 large eggs

    1 TB vanilla

    1½ cups finely grated or shredded carrots

    ½ cup golden raisins, rehydrated in hot water, then strained well

    1 cup toasted walnuts, chopped
    (¾ cup for dough, ¼ cup reserved for garnish)

    Orange sanding sugar, for garnish

    Cream the butter, granulated sugar, and brown sugar until light and fluffy.

    Add the eggs and vanilla at the same time and whip until smooth.

    In a separate bowl, mix the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.

    Add the dry ingredients to the wet and mix just until combined.

    Fold in the carrots.

    Fold in the strained raisins.

    Fold in ¾ cup toasted walnuts. Dough is done.

    Scoop onto lined trays and bake at 350°F for 12 to 14 minutes. Cool completely before frosting.

    Cream Cheese Frosting

    8 oz cream cheese, softened

    ½ stick butter, softened

    3 cups powdered sugar

    2 TB milk

    1 TB vanilla

    Whip the cream cheese and butter until smooth.

    Add the powdered sugar and mix to incorporate.

    Add the milk and vanilla, then whip until light and fluffy.

    Pipe with a star tip, then garnish with the remaining ¼ cup toasted walnuts and a little orange sanding sugar.
