Add 45 grams of Pilsbury sugar-free yellow cake mix, 3 tablespoons of water, and 1/8 to 1/4 teaspoon of lemon extract. Give it a mix and microwave for 50 seconds. Instead of water, you could also use Sprite Zero, but I didn’t have any on hand.

For the icing, I mix 10 grams of Truwhip with 8 grams of canned frosting. You can definitely use Cool Whip instead of Truwhip.

Super easy and hits the sweet spot without having a whole cake sitting around.
