I’ve made several and this looks good to me, I did notice a little shine to the meat, I don’t know what percentage weight loss you went for but I’m guessing 35%, if so I would shoot for 40% next time but otherwise I think it looks and probably will taste great.

For the mold/outside look point of view it looks about perfect.
But how much weight dif you lose and how long did you let it hang and what temperature?

if you want it drier you can hang it longer after you cut it

I only see the core as a softer than other parts.
If you are not sure, toast the slices lightly
