Add all dry ingredients to a bowl and mix. Cut in the cold butter until the mixture looks crumbly. Make a well in the center and pour in the buttermilk. Mix just until combined.
Turn the dough out and perform a bookfold: fold the left side into the center, then the right side over. Rotate the dough and repeat until you’ve completed a total of 4 folds.
Press the dough out and cut into biscuits, yielding about 8.
When cutting, press straight down. Do not twist or saw, so you don’t deflate the layers.
Brush lightly with egg wash.
Bake at 375°F for about 15 minutes, until golden.
Brush with the honey butter immediately after they come out of the oven.

Honey Butter Biscuits
Ingredients
2 1/2 cups all-purpose flour
2 TB baking powder
1 TB sugar
1 tsp salt
1 stick cold butter
1 1/4 cups whole milk buttermilk
Egg Wash
1 egg
splash of water
Whisk together.
Honey Butter (for brushing)
2 TB butter
2 TB honey
