


Has extra potatoes from making corned beef, so made some tater pancakes.
8 Yukon gold, 1/2 onion, 2 beaten eggs 1/4 c potato starch, 2 cloves garlic, salt, pepper and thyme. Shred potatoes and onion, then squeeze out the moisture. Mix everything and form into ball and then fry in some oil.
