    Hello!
    Been so exhausted lately. Went back to work about a month and a half ago after leaving my traumatic law enforcement job. It’s been a huge adjustment for my whole family having me back at work again, since I do most of the household duties (and gladly- I love taking care of my home). We’re considering me looking for part time or remote to get some of our life back – regardless, I still cook as it brings me joy even when I’m tired as it’s my biggest passion. 💞

    First photo is Homemade Chicken Quesadillas 🙂 – Well, semi-homemade I guess, because I used some rotisserie chicken and store bought wheat tortillas. I did a blend of cheeses that were in my refrigerator, and sautéed peppers and onions. They were so good, we really liked them.

    Second photo is Smoked Spare Ribs with Truffle-Parmesan Potato Wedges. So good! I hadn’t used the smoker in a few months and it felt great to get back out there. The potato wedges were a 7/10, only cause I like chunks better and prefer no truffle oil. Still good. Felt great to cook outdoors- now that it’s hot we’ll be spending a lot of time outside, cooking, swimming, and watching tv on our broken outdoor tv that the old homeowners left us 🔥😂. We bought the house in August of last year for context.

    Third photo is a homemade Chicken Lo Mein. Again, total fridge clean out. Barilla Protein Pasta, leftover coleslaw mix, a carrot on it’s last leg, sad looking bell peppers, and frozen broccoli. This was really tasty- so tasty that my partner that was planning on eating something else ended up eating 3 servings of it!

    Fourth pic is my classic comfort- BLT. This day on Whole Wheat Bread with Avocado. So basic, so simple, and so damn good. I’ve been meaning to bake some sourdough again but haven’t gotten around to it. I hate using store-bought bread when homemade tastes so good, but I need to make some time to bake.

    Fifth photo is the classic Breakfast for Dinner which I haven’t had in forever. Over-Medium Eggs with Mozzarella and Hot Sauce, Thick Cut bacon that I got from Sam’s Club (and it’s AWESOME) and completed the meal with homemade Black Iced Tea. So so good. I have to make this kind of food more often.

    Sixth photo has officially become declared my partner’s favorite meal.. he says he prefers over a $300 steakhouse. Garlic-Butter Steak Bites, Brussels Sprouts with Rosemary and Bacon, Jasmine Rice. Chimichurri for me (none for him). He raves for this. I used ribeye, actually some ribeye I froze back in December and didn’t want to get freezer burnt.
    It was still in perfect condition and cooked up amazingly!

    Seventh photo was an impulsive craving – homemade chicken nuggets, and added sweet potatoes and salad to make myself feel better about it. Good but nothing to rave over. Probably my least favorite meal of the week but still 8/10. Not mad about it ☺️

    Eighth photo was from last week- so exhausted and treated myself to sushi takeout from a place I found near us. Salmon and Eel are all I order. It was INCREDIBLE!!!🥰

    Bonus pic at the end of Maple the 6 pound dachshund and ultimate beggar. Maple waits by the oven for food to drop. She is silly but adorable and I love her with my whole heart.
