    This is one of my favorite dishes at a local Latin American fusion restaurant, so I attempted to recreate it at home!

    Chipotle aioli: mayo, adobo sauce from a can of chiles, orange juice, orange zest, and salt

    Orange-Chili sauce: sweet-chili sauce, orange marmalade, orange juice, lime juice (simmered briefly on the stove)

    Calamari was soaked in buttermilk and then dredged in a mixture of flour, cornstarch, paprika, and salt. Fried in oil at 350F until golden.
