Lunch: burrito bowl (the rice is seasoned with caldo de tomate con sabor de pollo – the secret to generic American Mexican restaurant rice)
Dinner: chicken and cannelini bean pesto pasta with spinach and tomato
I started weighing my vegetables today, incredible how much veg I can have when I measure instead of winging it 😂
