  1. Plus brown butter choc chip cookies for dessert. The drink is homemade lemonade with blueberry ice cubes. Blueberry flavor really doesn’t come through, but I like the look of them. 🙂

    This recipe is inspired by thatfoodiejess on IG.

    Chicken marinate is dark soy sauce, turmeric, grated garlic, black pepper, fish sauce, and light soy sauce. Marinated skin on chicken thighs overnight. Lightly dusted in cornstarch before pan frying in chicken schmaltz.

    Jasmine rice is cooked in chicken stock. Sautéed shallots and garlic in schmaltz. After they’ve softened, I toast the rice until it smells nutty. Add chicken and chicken knorr seasoning. Bring to boil, drop to low, cover and cook for 18 mins. Wait 5-10 mins after cooking before removing lid and fluffing.

    Garlic ginger scallion oil

    * 1/2″ knob of ginger grated
    * 5 scallions finely chopped
    * 2 large garlic cloves grated
    * pinch of sugar
    * pinch of salt,
    * roughly 1/2 cup hot schmaltz. – I just used the leftover fat after pan frying the chicken.
    * 1 spoonful sesame oil
    * sesame seeds
